Ingredients

  • 1 can pineapple rings

  • 12 Maraschino cherries

  • 5 tbsp of melted butter

  • 2/3 cup brown sugar

  • Cake:

  • 2 Eggs

  • 2/3 cup sugar

  • 4 tbsp Kokosa liqueur

  • 2/3 cup all-purpose flour

  • 1 tsp baking powder

  • Pinch of salt

Methods

  • Preheat oven to 350 degrees F. Prepare a 6 cup
  • jumbo muffin pan with butter and flour.
  • Mix the butter and brown sugar, pour into
  • muffin tin. Place pineapple ring in and put a cherry
  • in the center. Mix in a bowl flour, baking powder, salt,
  • and sugar. Add the eggs and Kokosa liqueur, mix
  • with a whisk until smooth.
  • Pour the batter on the pineapple. Bake in oven for
  • 20-25 minutes. Immediately place heatproof serving
  • plate upside down over pan, turn plate and pan over.
  • Leave pan over cake a few minutes so brown
  • sugar mixture can drizzle over cake, remove pan.
