Ingredients
1 can pineapple rings
12 Maraschino cherries
5 tbsp of melted butter
2/3 cup brown sugar
Cake:
2 Eggs
2/3 cup sugar
4 tbsp Kokosa liqueur
2/3 cup all-purpose flour
1 tsp baking powder
Pinch of salt
Methods
- Preheat oven to 350 degrees F. Prepare a 6 cup
- jumbo muffin pan with butter and flour.
- Mix the butter and brown sugar, pour into
- muffin tin. Place pineapple ring in and put a cherry
- in the center. Mix in a bowl flour, baking powder, salt,
- and sugar. Add the eggs and Kokosa liqueur, mix
- with a whisk until smooth.
- Pour the batter on the pineapple. Bake in oven for
- 20-25 minutes. Immediately place heatproof serving
- plate upside down over pan, turn plate and pan over.
- Leave pan over cake a few minutes so brown
- sugar mixture can drizzle over cake, remove pan.
